- Processing: Depulped then fermented without water for 24-36 hours. Washed in channels with water from the Ruanda River for 8 hours then Dried on raised beds for 7 to 14 days depending on sun exposure and moisture content.

ORIGIN & SOURCING:
This coffee is a collective lot from the 193 members of the Shilanga AMCOS (co-op) in the villages of Shilanga, Shomola, Welu, Igale and Ichesa in the Songwe region of Southern Tanzania.
The Shilanga AMCOS was founded in 1993 and at the time, only received home-processed parchment from its members. In 2013, the coop purchased a Penagos pulper and began producing washed coffees. And in 2019, the coop upgraded to a Penagos ecopulper and have been able to reduce wastewater and increase the quality of their coffees.
