PROCESS:
This delightful coffee, of Castillo and Colombia varietals, is processed with a RED HONEY method. Honey processes remove the skin of the cherry, leaving varying levels of the fruit on the bean while it dries, which imparts more sweetness and fruitier notes. (White, yellow, red, and black honey processes leave less and more fruit/mucilage on the bean during drying.) This coffee dried for 15 days before heading to the dry mill. Grown by our friends at Oro Molido in the Antioquia region of Colombia, at Finca La Sierra, at 1450-1800masl.

We've been working with Oro Molido since 2015. They are multigenerational coffee producers with farms in several regions in Colombia. Finca (farm) La Sierra is in Northern Colombia in the Antioquia Region.
